Beef Fillet with Garlic cheese
Ingredients
Beef fillet (you can use a different cut if you like, but I'm a fillet fan ::g::)
soft garlic cheese (e.g. Boursin)
little oil for frying
Equipment
frying pan
flipper
oven tray
rolling pin or mallet
cling film
Instuctions
Place the beef between two sheet of cling film and bash until it is very thin but still in one piece.
Heat a very tiny amount of oil in the frying pan until hot and seal the beef quickly on either side - do not cook.
Allow the beef to cool.
Spread one side of the beef with boursin and then roll into a thin swiss roll shape.
Heat the oven to 180 degrees C.
Put the rolled beef in an oven tray and cook for about 5 mins if you like your beef rareish and longer if you don't. Do not cook for too long or being thin the beef will become leathery.
To serve cut into inch rounds and arange on a plate with veggies of choice.
