I made zabaglione last night - very yummy and so easy.
Zabaglione recipe 1
Ingredients
8 large egg yolks
1 cup icing sugar
1/2 cup Marsala (or dry sherry)
(serves 6)
Equipment
Whisk, either a large balloon wisk or an electric one (I used an electric one due to the arm problem ::g::, but when I had it in a resturant they used a big balloon whisk and it did not take any longer)
large pyrex or metal bowl (something that conducts heat well)
large saucepan
Heat water in the bottom of the saucepan until it is just bubbling.
Put the egg yolks and sugar into the bowl and place over the water (the bowl should not touch the water).
Whisk until frothy.
Add the Marsala.
Whisk until 2-3 times original volume.
Serve immediately while still hot or allow to cool for 15 mins. Do not leave for longer or the Marsala with seperate out.
Looks nice served in long stem glasses with an amoretti biscuit on the side.
I'm going to try another Zabaglione recipe tonight that uses some vanilla and whipped cream as well - I'll let you know how it goes.
